The aroma of this 2008 vintage unfolds with great complexity and depth: ripe apples, yellow plums, quince, lemon curd, and mandarin peel merge with notes of brioche, toasted almonds, honey biscuits, and light spices. Over time, even more layers emerge in the glass — acacia blossoms, bergamot, liquorice, and a subtle mineral smokiness. On the palate, the champagne is incredibly concentrated, yet very "taut": the acidity is bright and precise, the bubbles are extremely fine, and the texture is creamy and aristocratic. The finish is long, saline-chalky, with brioche, citrus zest, and a light toasted bread character. The Cuvée was created in honour of one of Billecart-Salmon's founders – Nicolas François Billecart – and is considered one of the house's most prestigious champagnes. The 2008 vintage in the Champagne region is today considered one of the best harvests of the 21st century due to its exceptional balance of acidity, longevity, and minerality. Billecart-Salmon released this wine very late, allowing it to develop in the cellars for a decade, thus combining youthful energy with an already formed dimension of mature complexity. Many critics and collectors consider this cuvée to be one of the most elegant and long-lived examples of modern Champagne.

About the manufacturer

Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ, Champagne region, and remains one of the few major Champagne houses still owned by the same family. The house is renowned for its exceptionally elegant, subtle, and "quiet" style – instead of power or aggressive maturation, the focus here is on balance, textural softness, and aromatic precision. One of the most important parts of their philosophy is a very slow, low-temperature fermentation, which allows the purity and precision of the fruit to be preserved. Billecart-Salmon champagnes are often considered among the most refined in the region – a house that speaks more of harmony and detail than of demonstrative power.
A key figure in the history of this house was the long-serving winemaker François Domi, who shaped the Billecart-Salmon style for over 30 years and was considered one of Champagne's most talented winemakers. His approach was based on meticulous work in the cellar, long lees aging, and an extremely sensitive balancing act between freshness and complexity. Today, Florian Abel continues this direction, maintaining the house's identity – elegance, subtle minerality, and a very "clean" fruit profile. Billecart-Salmon champagnes are not focused on a prominent oak character – most cuvées are fermented and aged in stainless steel tanks to best express the terroir and texture.
