This is one of the most elegant and delicate rosé champagne styles. The aroma is dominated by wild strawberries, raspberries, cherries and rose petals, complemented by citrus zest and very subtle brioche notes. On the palate, the champagne is exceptionally silky and precise – the bubbles are fine, almost creamy, and the acidity is very elegant and "non-aggressive". The taste combines the freshness of red berries, subtle mineral chalkiness and a light citrus tone, which provides tension and a long, refined finish.

Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ, Champagne region, and remains one of the few major Champagne houses still owned by the same family. The house is renowned for its exceptionally elegant, subtle, and "quiet" style – instead of power or aggressive maturation, the focus here is on balance, textural softness, and aromatic precision. One of the most important parts of their philosophy is a very slow, low-temperature fermentation, which allows the purity and precision of the fruit to be preserved. Billecart-Salmon champagnes are often considered among the most refined in the region – a house that speaks more of harmony and detail than of demonstrative power.
A key figure in the history of this house was the long-serving winemaker François Domi, who shaped the Billecart-Salmon style for over 30 years and was considered one of Champagne's most talented winemakers. His approach was based on meticulous work in the cellar, long lees aging, and an extremely sensitive balancing act between freshness and complexity. Today, Florian Abel continues this direction, maintaining the house's identity – elegance, subtle minerality, and a very "clean" fruit profile. Billecart-Salmon champagnes are not focused on a prominent oak character – most cuvées are fermented and aged in stainless steel tanks to best express the terroir and texture.
