On the nose, this fortified wine reveals a highly concentrated, "dense" profile – raisins, dried figs, dates, and caramelized fruits dominate, complemented by dark chocolate, coffee, molasses, and toasted nuts. In the mouth, the wine is very sweet, velvety, and almost syrupy, yet its structure is supported by a subtle but important oxidative acidity, providing balance. The flavor develops in layers: from intense dried fruit sweetness to caramel, toffee, and cocoa, with a long, warm, and highly concentrated finish, featuring a nutty, slightly coffee-bitter undertone.

Pedro Ximénez is produced entirely differently from most conventional wines, as its sweetness comes not from residual fermentation but from naturally concentrated grapes. It all begins with grapes that, after harvesting, are laid out in the sun ("asoleo" method) and dried for several days or even weeks until they become almost like raisins – this evaporates water, and sugars and aromas are greatly concentrated. These extremely sweet berries are then pressed, fermentation begins but is quickly stopped by adding grape distillate (fortification) to retain natural sugar. Finally, the wine is aged in an oxidative environment in a solera system in oak barrels, where it slowly develops, acquiring the dark dried fruit, caramel, coffee, and chocolate character typical of the PX (Pedro Ximénez) style.

The Solera system is a traditional aging and blending method where wine is never from a single vintage but is continuously "transferred" between barrels of different ages, arranged in layers: the oldest wine is at the bottom, with progressively younger wines above it. Each time a portion is drawn from the bottom for bottling, it is replenished from above, creating a continuous blend of young and old wines that ensures a consistent style, great complexity, and oxidative maturity. Meanwhile, a venencia is a traditional tool from the Jerez (Sherry) region, used to draw wine directly from oak barrels in the solera system. It looks like a long, thin metal or bamboo stick with a small, cylindrical cup at the end, which is inserted through a small hole in the barrel's bung to extract a wine sample without disturbing it or compromising the aging process. A venencia is not only a practical tool but also symbolic – it is used to "taste" the wine directly from the heart of its aging, and the mastery of this process is considered an important part of sherry culture, requiring experience and precision to extract the correct amount of wine in one smooth movement.
Valdespino is one of the oldest sherry producers in the Jerez region, located in the heart of Jerez-Xérès-Sherry, Andalusia.
