On the nose, this Champagne is very clean and precise: citrus notes – lemon, lime, grapefruit – dominate, accompanied by green apple, pear, and subtle hints of red berries (currants, raspberries). As it opens up in the glass, layers of brioche, toasted bread, almonds, and delicate honey tones emerge. On the palate, the wine is lively, with precise acidity and fine, elegant bubbles that provide a creamy texture while maintaining tension. The flavor transitions from citrus freshness to a mineral, chalky backbone, and the finish is long, dry, with a subtle nutty and salty ending.

About the manufacturer

Champagne Bruno Paillard is an independent, family-owned Champagne house in the Champagne region, founded in 1981 by Bruno Paillard when he sought to create a Champagne focused not on quick consumption or a commercial style, but on precision, longevity, and the expression of terroir. From the very beginning, the house distinguished itself with a very conscious philosophy: smaller yields, longer aging on lees, extremely low dosage (Extra Brut style), and maximum transparency in the wine's structure. Today, his daughter Alice Paillard continues this direction, strengthening the idea that Champagne should be vibrant, responsible, and connected to its place, rather than just a "consistent product." This is a house that combines classic Champagne elegance with a modern approach based on sustainability and precision.
Alice Paillard is a second-generation leader who took the helm of her family's house and established a modern yet value-consistent vision. In an interview, she emphasizes that her relationship with champagne was formed from childhood, growing up in the Champagne region, where wine was not just a product, but a part of culture and people's stories, associated with memories, taste, and community. Leading the company, she speaks about the balance between tradition and responsibility – maintaining the principles established by her father, while adapting them to the modern world, especially in the areas of sustainability, transparency, and people's relationship with nature. Her approach is calm, reflective, and focused on a long-term vision – not rapid growth, but a deep expression of quality and terroir.
