About the manufacturer
Calle 23 was founded by French biochemist and engineer Sophie Decobecq, who moved to Mexico and applied her scientific knowledge to the study of agave fermentation and distillation. She focuses particularly on yeasts, fermentation, and the expression of different agave characteristics. Calle 23 tequila is produced in small batches, and the Blanco aims to showcase the purest character of the Los Altos terroir and cooked blue agave.
