The year 2023 in the Chablis region was characterized by warm and dry weather, allowing the grapes to ripen fully while maintaining the region's characteristic acidity. The grapes were hand-picked from 50–60-year-old vines growing in the Grand Cru village, on Kimmeridgian clay soil. Fermentation took place at a controlled temperature of 16–18 °C, using indigenous yeasts. This was followed by malolactic fermentation, which gives the wine softness and roundness.

The wine has a medium straw yellow color. The aroma is dominated by white flowers, citrus fruits, and mineral notes reminiscent of seashells. The taste reveals freshness, minerality, and a subtle influence of oak, providing complexity. This is an elegant and balanced wine, perfectly reflecting the Chablis terroir.

Domaine Charly Nicolle is a family-run wine estate located in the village of Fleys, in northern Burgundy, in the Chablis region. The family’s winemaking tradition dates back to the end of the 19th century, when the first vineyards were established in the area. The Domaine began operations in 1979, when Robert Nicolle and Josette Laroche purchased a small plot of land. Later, in 1999, their son Charly joined them, who graduated in winemaking and began working in the family vineyards. Currently, Domaine Charly Nicolle manages around 20 hectares of vineyards, mainly located in the Fleys area. The largest parts of the vineyards belong to the AOC Chablis appellation, as well as the Premier Cru Les Fourneaux and Mont de Milieu plots. The wines are produced in accordance with the principles of sustainable agriculture, using integrated farming and aiming for High Environmental Value (HVE) certification.
The Chablis region is renowned for its unique terroir, where the vineyards are shaped by a mild climate, soils rich in limestone and marine fossils, and high microclimates of streams and hills. This geology gives the wines a distinctive mineral character, freshness and elegance, and each plot – from Petit Chablis to Grand Cru – reveals its own subtle nuanced variations. Many farms, including Domaine Charly Nicolle, use oak barrels for aging to give the wine additional structure, depth of aromas and long-term potential, while maintaining freshness and fruitiness. In addition, dogs can often be found in Chablis vineyards – they not only protect the harvest from predators, but also add vitality and charm to the farm, becoming loyal and invaluable companions in the vineyards.
