One of the most renowned gastronomic ciders in the world, distinguished by its elegance and wine-worthy complexity. The aroma reveals fresh apples, apple peel, citrus notes, white flowers, and subtle spice accents. The taste is dry, refreshing, and exceptionally precise – natural acidity, soft tannins, and fine bubbles create a light yet structured cider, whose long, mineral finish is more reminiscent of a good sparkling wine than traditional cider.

About the manufacturer
Eric Bordelet is one of the most influential cider makers of our time, having fundamentally changed the perception of this beverage. Before returning to his family estate in Normandy, he worked as a sommelier at the legendary three-Michelin-starred L'Arpège restaurant in Paris. It was the renowned winemaker Didier Dagueneau who encouraged him to apply winemaking principles to cider production. In 1992, Eric took over the family orchards at Château de Hauteville in southern Normandy and began crafting ciders that are now considered benchmarks in the gastronomic world.
The estate manages approximately 23 hectares of organically and biodynamically maintained orchards, where dozens of ancient apple and pear varieties grow, some trees reaching an age of 200–300 years. Eric Bordelet's philosophy is based on respect for nature, ancient varieties, and terroir – each cider is crafted with the same meticulous care as a high-end wine. Thanks to this approach, his ciders now grace the wine lists of the world's best restaurants and are considered among the most prestigious ciders globally.
