The production of Eiswein requires enormous patience and risk: the grapes are left hanging on the vines until the deep winter frosts and are picked only when the temperature drops to at least -7 / -8 °C. The harvest is picked at night or early in the morning, when the berries are completely frozen, so that when pressed, the water remains as ice crystals, and only the highly concentrated, sweet and aromatic juice escapes. The harvest is very small, the work is manual, and any bad weather or birds can destroy the entire year's effort, making each bottle of Eiswein a true rarity.
Austria is one of the best countries for producing Eiswein, as it naturally experiences stable winters with real cold, rather than artificial freezing, as in some other countries. The continental climate allows the grapes to maintain high acidity even at very late ripening, which is an essential part of the balance of Eiswein - without acid, a sweet wine would be heavy and sticky. Zweigelt was chosen in this context for good reason: it is a grape with an Austrian identity, characterized by a pronounced berry character, natural fruitiness and sufficient acidity, which in the Eiswein style turns into rich notes of cherries, red berries and even pomegranate. The result is a sweet but lively, intense but elegant wine that clearly shows how much work, risk and craftsmanship goes into each sip.

Weingut Hager Matthias is a small-scale but dedicated winery located in the Kamptal region of Austria, a place known for its cool climate and high-quality Riesling and Grüner Veltliner wines. Hager Matthias Winery is distinguished by the fact that even rarely produced styles like Eiswein are executed with the same precision and care as the main dry wines. This shows not only craftsmanship, but also a great determination to find a moderate balance between sweetness, acidity and subtlety of aromas - especially important in such complex dessert wines.
