Maison Jaffelin is one of the oldest names in Beaune, with a history dating back to the 19th century. The winery is located in a historic 13th-century Dominican monastery in the heart of Burgundy. Throughout its history, Jaffelin has worked with the best vineyards of Côte de Beaune and Côte de Nuits, and today is renowned for its classic, elegant Burgundian style, which prioritizes the expression of terroir over winemaking intervention. Jaffelin's philosophy is based on respect for the identity of each village and appellation. Wines are produced in small batches to preserve the character and natural balance of the region. Their interpretation of Chablis is particularly traditional – a pure, mineral, and precise Chardonnay, reflecting the limestone soils of the northernmost part of Burgundy.
