The aroma reveals notes of pear, white peach, white flowers, and citrus, complemented by nuances of toasted bread, butter, and delicate vanilla from barrel aging. On the palate, the wine is elegant and concentrated, with a pronounced mineral structure, fresh acidity, and a long, precise finish. It embodies the typical Saint-Aubin style – more tension and chalky freshness than richness.

"Sur Gamay" is one of Saint-Aubin's Premier Cru climates, located on the slopes of Montagne du Ban near Puligny-Montrachet. Its southern exposure and calcareous soil allow for the cultivation of highly concentrated yet elegant Chardonnay grapes. This Premier Cru is often considered one of the best value alternatives to the famous Puligny-Montrachet and Chassagne-Montrachet wines.

Saint-Aubin has long lived in the shadow of its more renowned neighbors, but in recent decades it has become one of the most exciting appellations in Côte de Beaune. Among wine enthusiasts, this village is often valued for its exceptional price-quality ratio and the distinct character of its limestone terroir.

Maison Jaffelin is one of Beaune's oldest names, with a history dating back to the 19th century. The winery is located in a historic 13th-century Dominican monastery in the heart of Burgundy. Throughout its history, Jaffelin has worked with the best vineyards of Côte de Beaune and Côte de Nuits, and today it is renowned for its classic, elegant Burgundian style, which prioritizes the expression of terroir over winemaking intervention. Jaffelin's philosophy is based on respect for the identity of each village and appellation. Wines are produced in small batches to preserve the character and natural balance of the region. Their interpretation of Chablis is highly traditional – a pure, mineral, and precise Chardonnay that reflects the limestone soils of Burgundy's northernmost region.
