Les Vergelesses is one of the most prestigious Premier Cru climats in Savigny-Lès-Beaune, located in the northern part of the appellation, near Pernand-Vergelesses. The vineyard is situated on an east-facing slope, where shallow, stony clay and limestone soils prevail. These conditions allow for the cultivation of exceptionally elegant, mineral, and long-lived Chardonnay wines.

Les Vergelesses is considered one of the benchmark Premier Cru vineyards in Savigny-Lès-Beaune. Due to its higher position on the slope and calcareous terroir, the wines produced here boast greater concentration, freshness, and aging potential than most other wines from the village.

Maison Jaffelin is one of Beaune's oldest names, with a history dating back to the 19th century. The winery is located in a historic 13th-century Dominican monastery in the heart of Burgundy. Throughout its history, Jaffelin has worked with the best vineyards of Côte de Beaune and Côte de Nuits, and today it is renowned for its classic, elegant Burgundian style, which prioritizes the expression of terroir over winemaking intervention. Jaffelin's philosophy is based on respect for the identity of each village and appellation. Wines are produced in small batches to preserve the character and natural balance of the region. Their interpretation of Chablis is highly traditional – a pure, mineral, and precise Chardonnay that reflects the limestone soils of Burgundy's northernmost region.
