Les Caillottes wine comes from vines over 40 years old, growing in limestone soils known as Les Caillottes. These soils give the wine a distinctive mineral structure, and the vintages from the old vines are characterized by richness and concentration.

The grapes were hand-picked, carefully selected. After a gentle and slow pressing under low pressure, the juice settled naturally for 12-16 hours. Fermentation took place at a temperature of 15-20 °C, and the wine was aged for 5 months on fine lees in stainless steel tanks to maintain freshness and aromatic complexity. The aroma is dominated by mineral and ripe fruit notes, which create a refreshing and pleasant bouquet. The taste of the wine is bright and round, with a subtle acidity that gives a pleasant feeling of freshness.

Family heritage and terroir Jean-Marie Reverdy & Fils is a family winemaking story that goes back 11 generations and dates back to the 19th century. Jean-Marie, his wife Catherine and sons Guillaume and Baptiste, live, work and make wines in their vineyards, located around the picturesque Sancerre hills. They make the most of the south-eastern, southern plots, where Sauvignon Blanc and Pinot Noir varieties grow, planted in a variety of soils - from sandy "Terres à Silex" to calcareous "Caillottes" and chalky "Terres Blanches".
The Reverdy family has been working with the principles of more sustainable agriculture for over 20 years, they strive to apply responsible farming methods, and in 2020 they even received the HVE (Haute Valeur Environnementale) certificate for environmental protection. There is no deviation from naturalness: from grape selection to pressing and fermentation - every step is carried out with the utmost care. In this way, the true terroir is released in their wines, which are characterized by freshness, minerality and elegance.
