Nikolaihof is one of the most historic wineries in the world and the oldest winery in Austria, with a history spanning almost 2000 years, dating back to Roman times. Located in the village of Mautern, the winery has been working biodynamically since 1971, and today the entire estate is Demeter certified. The family does not use herbicides, synthetic pesticides, or mineral fertilizers in their vineyards. Nikolaihof's philosophy is based on patience and minimal intervention: grapes are hand-picked, fermentation occurs without artificial yeasts, and wines are aged in the historic Roman cellar in large old oak barrels. "Aus den Gärten" is one of Nikolaihof's more everyday and accessible wines, yet even at this level, the fundamental characteristics of the house remain – biodynamic viticulture, spontaneous fermentation, and a vibrant, terroir-driven wine.
