The aroma is dominated by lemon, green apple peel, white peaches, and white flower notes, complemented by subtle brioche and fresh almond tones. In the mouth, the champagne is very energetic and direct—the acidity is lively, the bubbles are fine, and the texture is elegantly creamy. The taste clearly reveals chalky minerality, citrus tension, and a very clean, refreshing finish. The Cuis terroir provides a bit more softness and fruitiness than the stricter Le Mesnil styles, allowing this Blanc de Blancs to maintain an excellent balance between freshness and approachability.

Pierre Gimonnet & Fils is a family-owned Champagne house located in the village of Cuis, in the Côte des Blancs region, and is considered one of the most important Blanc de Blancs specialists in the entire Champagne world. Their history dates back to the 18th century, but their modern identity was shaped by the generation of the Gimonnet family who deliberately chose an almost exclusive focus on Chardonnay and refined their style to maximum elegance and precision. The house's philosophy is based on the idea that Champagne should be a "transparent" reflection of its terroir: minimal intervention in the cellar, no excessive oak, very controlled aging on lees, and extremely careful blending of different plots from Cuis and surrounding Grand Cru vineyards. Due to this approach, Gimonnet Champagnes are characterized by exceptional freshness, chalky mineral tension, and a very precise structure that offers both accessibility in youth and serious aging potential.
