The year 2019 was very balanced – cool night temperatures and sunny days helped the Cabernet Sauvignon maintain a bright acidity along with a rich aroma of ripe black berries. The aroma is dominated by blackcurrants, blackberries, and plums, accompanied by earthy, tobacco, and black pepper notes. On the palate, the wine is dry, full-bodied, with firm tannins and an elegant acidity profile that provides structure and long aging potential. A mineral foundation and subtle spice tones highlight the wine's distinctiveness. The finish is long, harmonious, and expressive – a refined yet powerful interpretation of Cabernet in South Australia.

About the manufacturer
One of Bert Salomon's dreams was to have a good selection of red wines alongside the white wines produced at the family winery "Salomon Undhof" in Austria's Kremstal region. This dream came true in far-off Australia, which Bert fell in love with in the 1960s when he was on the board of directors at the wine import company "Schlumberger." Thanks to him, Australian wine was imported into Austria for the first time. Incidentally, at that time, B. Salomon was one of the directors of the Austrian Wine Institute. He realized his big dream in 1995 when he acquired the "Salomon Estate" winery in the Finniss River region, about 50 kilometers from Adelaide. The most interesting part is that in 1866, Johann Nepomuk Hinteröcker, a descendant of the Salomon family, emigrated from Austria's Wachau region to Australia. After four years of working at the "Seven Hills" winery (in the Clare Valley) in Norwood, a suburb of Adelaide, he founded St. Ignatius College. Who could have known that more than a hundred years later, Salomon's descendants would return to Australia and once again cultivate grapes?
