Cabernet Sauvignon grapes require a long, warm growing season, and McLaren Vale allows the grapes to fully ripen, so there is almost no greenness or bitterness that can sometimes occur in cooler regions. The grapes maintain a good balance between sugar and acid, making the wines rich but not too heavy or burdensome. The aroma is mainly blackcurrant, ripe cherries and plums, complemented by notes of spice, smoke, cocoa or cedar. The eucalyptus aroma characteristic of Australia is not accidental - the eucalyptus trees surrounding the vineyards and the climate form a recognizable aroma profile. In the mouth, McLaren Vale Cabernet Sauvignon is full-bodied, with soft, well-ripened tannins and good, lively acidity. The wine feels round, harmonious and easy to drink, but at the same time has structure. The aftertaste is long, with lingering fruitiness, subtle spices and a light earthy tone, clearly revealing the character of this region.
